Here's a quick and and easy recipe that won't cost you a bundle from our nighttime hostess Delilah. Roasted chicken with potatoes sounds like the perfect recipe for a crisp fall night. Roasted Chicken with Potatoes  

1 whole chicken

1/3-1/2c soy sauce

rosemary (fresh or dried)

2T red wine vinegar

4T olive oil, pepper

2 cloves garlic  

Mix last 5 ingredients to make marinade. In a foil-lined pan, place coined potatoes around chicken and pour marinade over top. Bake at 375 degrees till done (about an hour or so). It is simple, easy, everyone who has tried it LOVES it. You can make it for the entire family without spending a fortune. 

I recommend it with lightly steamed mixed veggies, roasted veggies or baked sweet potatoes coated in olive oil. If you don't have red wine vinegar opt for apple or cranberry juice (or another juice with strong flavor and some acidity). I don't recommend using salt because the sauce has enough. Try to take some time to slow down, enjoy this home-cooked meal, talk with someone you love and wind down from your busy week. Just a thought.
